A granita is a frozen fruit dessert that is so refreshing on a summer day. The ingredients are fresh and simple, no fancy equipment is needed and you can make it with or without booze. If youāre in the mood for a sweet, crunchy Italian dessert, try this recipe.
Sanpellegrino Sparkling Granita:
Ingredients
-1 cup Sanpellegrino
-1/2 cup sugar
-2 pounds fresh raspberries
-1 ounce lemon juice
-3/4 light rum (optional)
Method
-Combine all the ingredients into a blender until smooth, then add to a 9×13ā pan and freeze for 1 hour. Then fluff with a fork.
-Place back in the freezer and repeat this process every 30 minutes, three to four more times or until the mixture is frozen and looks like broken granite (which is how the granita got its name).
-For variety try using other flavors of Sanpellegrino and/or different fresh fruits. Strawberries, pineapple, watermelon, mango, blueberries or blackberries are all great options. You can also switch out the rum for vodka or tequila (or leave it out altogether).
As a mom of tweens, Iām always looking for recipes that can work for both the kids and parents, and this is definitely one of them! Make one batch for the kids and another grown-up version for the adults and youāre set for a summer afternoon.
