Resorts World Las Vegas, so hot pot right now.
Copper Sun, the first fine-dining restaurant from mega-chain Happy Lamb Hot Pot, will open at The District at Resorts World Las Vegas this summer.
Copper Sun will offer a high-end hot-pot experience centered around its signature eight-hour bone-marrow broth that guests will enjoy as they swish around premium cuts of lamb and other proteins. There will also be a cocktail menu with drinks inspired by the Asian ingredients in the restaurant’s herbal soup.
Happy Lamb is a rapidly growing international brand that serves inner-Mongolian hot pot at more than 100 locations in 11 countries. And it’s dramatically leveling up into a more luxurious category with Copper Sun.
“In looking for a home on the iconic Las Vegas Strip, we saw a perfect synergy between our culinary vision and Resorts World’s commitment to curating the best in global dining,” Will Cheung, vice president of Happy Lamb, said in a statement. “Together with Resorts World, we intend to create more than just a dining destination. We aspire to create memories and share stories through the art of communal dining.”
Copper Sun joins a formidable Resorts World dining lineup that includes chef Nicole Brisson’s Brezza, chef Ray Garcia’s Viva, Carver Road Hospitality’s Carversteak and chef Tal Ronnen’s Crossroads Kitchen. Resorts World is also home to the popular Famous Foods Street Eats food hall, which features outposts of acclaimed Asian vendors like Hong Kong’s Ah Chun Shandong Dumpling and Singapore’s Boon Tong Kee and Geylang Claypot Rice.
“The addition of Copper Sun to The District further solidifies our commitment to offering modern luxury experiences with international flair as we usher in the new age of Las Vegas,” Peter LaVoie, president of Resorts World Las Vegas, said in a statement.
The casino-resort, which opened in 2021 and was created by Malaysian gaming giant Genting Berhard, has been actively widening the range of its dining options: Brooklyn cheesecake legend Junior’s recently opened at Resorts World, and chef Jeremy Ford’s Michelin-starred Miami restaurant Stubborn Seed is coming this summer.
Resorts World will also be home to the official closing party for The World’s 50 Best Restaurants when the prestigious awards head to Las Vegas in June. Summers are already extra hot at Resorts World, with venues like Ayu Dayclub and Zouk bringing in world-renowned DJs to keep the party going (and big players feasting at glamorous Asian restaurants like Genting Palace and Fuhu when they’re taking a break from high-stakes poker sessions). Adding the festive experience of hot pot, which Las Vegas residents and visitors already enjoy at restaurants like Chubby Cattle, The X Pot, Nabe and the new Mala Town, should add some sizzle and serious spice to the already sweltering scene.
